Green Power Smoothie

Are you too busy getting ready for work or feeding your family in the morning? Instead of grabbing the usual but unhealthy sweet pastry, danish, donut and so on, why don’t you spare 5 minutes to whip up a nutritious, filling smoothie to jump-start your day. You will be pleasantly surprised how good it actually tastes.

PREP TIME: 5 MINS  COOK TIME: N/A  SERVES: 2-4

Ingredients:

1 banana
1/2 cup fruit, fresh or frozen (strawberry, peach, mango, etc.)
1/2 Bartlett pear or green apple, washed and chopped
4 kale leaves, washed and stem removed (I add tons of greens)
1 1/2 cup water or plant-milk**
1 or 2 Medjool dates, pitted (optional)
1 teaspoon flax or chia seed or superfood of choice (optional)

Directions:

Put all the ingredients in a high speed blender and blend well until smooth. Pour into 2 tall glasses and serve immediately with a colorful straw, maybe top it with the superfood of your choice (like bee pollen in the picture) and enjoy!
Can be kept in the refrigerator for up to 12 hours. For a thick smoothie, use frozen fruits or ice cubes before blending. For a thinner smoothie, add extra water. You could also use almond milk or any pant-based milks of your choice. Add more Medjool dates if you like it sweeter or some protein powder of choice for a great post-workout smoothie.
Switch your greens around by using a cup (or more) of spinach, swiss chard, lettuce, etc. to get a variety of minerals, vitamins, nutrients everyday.
If you’ve never tried green smoothie before don’t be intimated, just add more fruit and less green first allowing your taste buds to adjust to the new “earthy” fresh taste. Slowly but surely, you will be able to increase the amount of green and liking it too!

** You could use any plant-milk of choice here, we rotate between almond milk, coconut milk or hemp milk.  Decrease the liquid quantity to 3/4 to 1 cup should you wish to serve the smoothie in a bowl also known as green smoothie bowl with your favorite toppings (fruits, seeds, bee pollen if using, shredded coconut, granola, etc.)  Feel free to check out my Instagram account for smoothie bowl ideas or better yet make your own creation and enjoy!
